Wildtree Wednesday: Zesty Mustard Chicken

The Zesty Mustard Sauce is one of the new fall products. I highly recommend it! We used it to marinade boneless chicken breasts over night, cooked them in a pang and served them with a big salad!

Dinner was simple and healthy. It was perfect.

Wildtree Wednesday: Lemon Rosemary Green Beans

We had a pot luck at church on Sunday and I concocted this green bean dish to take. It was simple, quick, and tasty. I was pleased to see so many of the children of the church taking big scoops my green beans- they didn't last long at all and we very yummy!
Take 1 pound of green beans, wash and cut the ends off and place them in a microwave safe dish.
Add 1 Tbsp of butter (cut up) and 1tsp of Wildtree's Lemon Rosemary blend. When you are ready to cook- add 1 cup of water, cover, and microwave for 6-7 minutes. Drain the excess water and serve!!
You can toss the beans with extra seasoning/Grapeseed oil if you want after draining then, but it is not needed.

Wildtree Wednesday: Lemon Rosemary Roasted Fennel

I love farm share days!!! This week was a real winning box: leeks, fennel, zephyr squash, zuchini, carrots, and lettuce. I love getting a box of fresh, organic produce each week and trying new things!

Preheat the oven to 375.
Drizzle with Wildtree Natural Grapeseed Oil
Sprinkle with Lemon Rosemary Blend
Add a bit of lemon juice to your taste and toss.
Roast for ten minutes, toss, and return to the oven for another 15 minutes.
This was so great it didn't make it to the table! I ate it all straight from the pan!!!

Wildtree Wednesday: Fajitas

Can I tell you how much I love having a stash of freezer meals on hand? I can? Well I love it so much. Especially when I know I can have dinner on the table in 15 - 20 minutes. This dish was something I threw together from leftover items after I hosted a Freezer Meal Workshop on Saturday. I had chicken breasts (cut into strips) and frozen stir fry veggies (peppers and onions) and added them to a gallon sized freezer bag with some Wildtree Natural Grapeseed Oil and Faijta Blend squished it all together and stuck it in the freezer.
I served them with shredded cheese and sour cream on a way too big tortilla (thanks, Ryan!).

Wildtree Wednesday: Turkey Chili

One of my favorite things about the freezer meals from my Wildtree Freezer Meal Workshop is that even though you have step-by-step recipes that come with the meals, you are not limited by them. One of the recipes is for Southwest Turkey Burgers, which sound awesome, however, I didn’t want to go out and buy the other items I needed the day of. The meat was thawed, so I got a bit creative. Southwest Turkey Chili was born.

I browned the Southwest Turkey Burger meat, then added crushed tomatoes, pinto beans, and black beans and then let it simmer for 20 minutes. Easy Peasy.

We topped it with cheese and sour cream and hunkered down to watch it snow last week. Perfection in a bowl!

Ryan was very happy with this meal and it will be repeated!

Wildtree Wednesday

Inspired by this recipe, I set out to make a homemade pizza for my loves on Valentines Day. I had everything on hand less the toppings and that was solved with a quick trip to the grocery store.

Wildtree products used:
Hearty Spaghetti Sauce Blend
Quick and Easy Whole Wheat Pizza Dough
Roasted Garlic Grapeseed Oil

Other ingredients:
1 can Tomato Sauce
Shredded cheese
Pepperoni
Peppers and Onions

Preheat oven to 450F, combine Hearty Spaghetti blend with can of tomato sauce in a small saucepan and simmer for 20 minutes. Mix dough as package directs and shape on a pizza pan. Spread prepared sauce over the dough, leaving a small border for the crust, sprinkle with cheese and top with desired toppings. Bake for 12-14 minutes.
